The journey to perfect dough begins with selecting the right flour. We use a blend of "00" flour imported directly from Italy and high-protein Canadian flour to achieve the perfect texture. The protein content is crucial—too little and your crust will be weak, too much and it becomes too chewy.
Another critical component is fermentation time. Our dough undergoes a 48-hour cold fermentation process, which develops complex flavors and improves digestibility. This patience is what separates good pizza from exceptional pizza.
